Easy Mango Avocado Toast – Healthy, Sweet & Savory Breakfast in 10 Minutes


Many of you might think that since the Avocados are native to Mexico, the first Avocado toast recipe would have been recorded in Mexico. But history says it is different! It was first documented in the city of Sydney from Australia, by a chef named Bill Granger, who is said to have first put it on their café menu in 1993. However, some arguments state the practice of putting avocados on bread or toast has been through the early 20th century.

Let’s dive into the recipe!

INGREDIENTS:

For Toast

  • 1 ripe Avocado
  • 1 ripe Mango slices
  • 2 slices of Sourdough bread
  • 1 cube butter or 1 tbsp Ghee
  • 3 tbsp of unflavored Greek yogurt
  • ½ cup of finely diced onions and tomatoes
  • 1 Jalapeno or 2-3 green chilies chopped
  • Any seasoning powder of choice, I prefer oregano
  • Microgreens and Coriander for garnish

For Dressing

  • 1 lime
  • 2 tbsp tahini paste or any unsweetened nut butter
  • 1 tbsp of honey

Let’s start cooking!!!

Let us first prepare the dressing and set it aside. For the dressing, take a bowl and add 2 tbsp of the tahini paste, now squeeze out a lime, and add 1 tbsp of honey to the mixture. Add a pinch of salt to balance out the flavors and whisk it well until combined. The nuttiness from the tahini and the sweetness of the honey, when mixed with the acidity of lime, gives out an excellent flavor burst on the palate. Once the dressing is done, set it aside and start preparing the toast.

First, let’s prepare the Avocado spread.
Cut open a ripe Avocado into a bowl. Throw in ½ a cup of finely diced onions and tomatoes along with finely chopped Jalapeno. Now add some salt and pepper and mash the mixture roughly using the back of a spoon. Let’s add some lemon juice just to add a punch to the spread. Mix everything, and the Avocado spread, which is also called “Guacamole”.

Let us assemble the toast.


Toast the sourdough bread using butter or ghee on a slow flame until it is crispy on both sides. Apply 1&1/2 tbsp Greek yogurt, this step prevents the bread from getting soggy from all the juices from the spread. Take a generous amount of the Guacamole that we’ve just prepared and spread it evenly on the bread, and add some of the dressing we’ve prepared. Now comes the interesting part, add the sliced ripe mangoes on top. This gives an amazing sweetness and cuts the buttery richness from the avocado. Make sure the mango is sweet. Add some microgreens for garnish, sprinkle a pinch of salt and pepper. Now, drizzle the rest of the dressing, and there you have it!! Amazing, rich, and sweet Mango Avocado toast!!
